Maklouba (مقلوبة)


Ingredients:
• 400-500 grms eggplant
• 2 green peppers sliced
• 1 large tomato sliced
• 1 large onion sliced
• 1 ¼ cup short grain rice washed
• About 2 ½ cup soup
• 2 broiled chicken breasts or 1/3 kg broiled meat cubes
• ½ tsp cinnamon
• 1 tsp turmeric
• Salt & pepper
Method:
Peel the eggplant, slice them and sprinkle some salt on them. Leave for about ½ an hr, then deep fry. Slice the pepper, tomatoes and onion, cut the chicken into pieces and set aside. Wash the rice and mix in the turmeric, cinnamon, salt & pepper. In a medium sized pan, layer the onions, tomatoes and pepper, then place half of the fried eggplant and chicken (or meat). Mix the rest of the chicken with the rice, place half of the rice mixture then layer the remaining eggplant, then place the rest of the rice mixture on top of it. Place the pot on medium heat and cover with soup, the soup should barely be covering the rice. Let it boil for a few seconds then lower heat and let it cook for about half an hour or until all the water has evaporated and the rice is cooked. Invert in a large plate so that it looks like a cake.

Meat Bicata (Fafa)

Ingredients:
• 1 kg meat fillet (tenderlion, or veal)
• 1 can sliced mushroom
• 1 large onion diced
• 4 garlic cloves crushed
• Salt and pepper
• 1 tsp Paprika
• 2 tbls Mustard
• 1-11/2 cup Cooking cream
• Oil or butter
Method:
Wash meat with water, sprinkle some salt and pepper on it and place in the fridge. In a pan heat some oil or butter, and brown meat on both sides. Then add the diced onion, and mix, and salt add pepper, and garlic, mix thoroughly. Finally add mushrooms and mix well. Leave until the meat is cooked, adding water whenever needed. When meat is done add the paprika, and mustard and mix well. Then add the cream and mix well, could think out the mixture with water or thicken the sauce with some starch dissolved in water. Let the mixture boil then turn off heat.
Serve with brown rice.

Brown rice with Cinnamon (Fafa)

Ingredients:
• 2 cups rice
• 2 cups soup
• Oil
• Salt and pepper
• Cinnamon
• 1 tbls sugar
Method:
Place sugar in a pot over medium heat, mix with a spoon until it browns, then place the soup, oil, salt and pepper, and cinnamon. Mix well then add washed rice, when the mixture boils, cover and lower heat. Leave for about 15 minutes or until the rice is done, mix the rice once during the 15 minutes.

Welcome to my Blog !

Finally I started the blog I have been meaning to launch for a long time. It all started when I wanted a good way to organize and share all my favourite and tried out recipes, more of like a database. The idea of the blog is that it would share both western and middle easter recipes that I have tried and altered to fit our region. I started by typing all my recipes with their photos if possible in a word document as it would be easier to post them online when they are typed. When I found that typing them would take forever especially with a baby and a toddler on hand, I went ahead and started the blog and decided to post the recipes gradually. Well enough said ! I will start posting the reciped one after the other whenever I get the chance, feel free to comment and ask if you have any inquiries.
